The chicken stuffed with vegetables recipe is one of my favorite recipe for cooking, in any time of the year.

And because markets were filled with zucchini, peppers and eggplants… beautiful, beautiful …I have decided to prepare this chicken stuffed with vegetables recipe.

I’ll show you today the perfect recipe for a light dinner: we will prepare stuffed vegetables and use it for stuffing chicken with many vegetables. The recipe is not expensive and is a good option for those that look after their body weight!


1 eggplant
1 red bell pepper
2 zucchini
500 gr of minced turkey
2 spring onions
1 strand of green garlic
2 tablespoons tomato paste
200ml water or vegetable broth
a bunch of dill
salt and pepper to taste
fresh or dried basil
100gr grated cheese
3 tablespoons olive oil

Wash well the vegetables, because we will cook them with the peel! Cut in half, lengthwise the eggplant, the zucchini and the bell pepper.

Remove with a spoon the seeds from the peppers, eggplant, zucchini from its core. Then chop it finely and put it away.

Cut onions and garlic in thin slices, then fry them in hot oil. Cut meat pieces, put it over the onions and stir it until they change their color.

Add eggplant and zucchini core, put water or vegetable broth, tomato paste, season it with salt and pepper and let it cook for 15-20 minutes on a medium heat.

Stop the heat and add the dill and basil chopped. After the composition was cooled down, fill the halves of vegetables and put them in tray greased a little with oil.
